MORE PARTY PHOTOS

Thanks again to Carlos, Nestor and Rodney for these wonderful photos. Rodney took all these photos. Not only did they help in the preparation the day before (and the day of the party), they also cleaned up at past midnight! Thank you , thank you, thank you!!!!!

THE MENU

With an "Islands" theme, we came up with some fantastic dishes from different islands. We had a couple of popular dishes from Guam like Chicken Kelaguin Salad and Red Rice; a Hawaiian favorite Kalua Pork which is a "homemade" version of the roasted pig with a spicy Mango Chilli Sauce on the side; a Cuban dish called Ropa Vieja as our Carribean Stew partnered with Yucca Root (cassava) and Sweet Potato pancakes; exotic Curry Fish wrapped in Banana leaves and Philippine party staples Honey BBQ Chicken and Grilled Squid. A sweet and sour Island Slaw salad ( a revised version of Coleslaw) completed the main dishes.

The desserts are equally tasty: Mango Tapioca, Coconut Pudding with Rum and Tropical Fruit Salad.

We also served Crayfish cooked the Swedish way (so it is not an island dish but hey, it's Swedish!) with dill and beer and of course no birthday celebration will be complete without the customary noodle dish for "long life". We quickly whipped up a revised version of the Vietnamese rolls by using vegetables and rice noodles with peanut sauce and wrapped in rice paper for our Noodle Rolls.
