Tropical Soy Ice Cream

And of course there's dessert. We seldom have dessert but I had a lot of ripening fruits that needed to be used immediately. Instead of making the regular smoothie, I took my old Krups ice cream maker (got it at a cooking school sale years ago for $5) and made soy ice cream instead.



Ingredients:

1 cup soy milk vanilla flavor
1 cup blended or mashed tropical fruits (I used papaya and kiwi)


1. Mix all ingredients.
2. Following manufacturer's directions, pour blended fruits into ice cream maker.

This took only 20 minutes to make. And they are so refreshing. This yielded 1 quart of ice cream so now we have some in the freezer for late night snacks!

Next time I will try to make it with cheese. I remember Lolo Iyong (my grandfather) making this delicious ice cream. Hmmmm...I should try all the flavors I can remember--keso, ube, buko, mango...yummy!!!
